GROUNDNUT SOUP

INGREDIENTS
- Groundnut paste
- Onions
- Fresh tomatoes
- Tomato paste
- Dry red chili pepper
- Chicken
- Dry and smoked fish
- Spices
- Salt
METHOD OF PREPARATION
- Pour groundnut paste into cooking pot
- Add water and put on fire
- Stir till the paste mixes very well with water
- Stir continuously till there is a formation of oil at the surface
- Cover and leave to boil
- Wash chicken and put in a different cooking pot.
- Chop onions, garlic and ginger into smaller sizes
- Put chopped onions, garlic and ginger blender, add water then blend
- Pour blended onion, garlic and ginger into the cooking pot containing the chicken, add salt and spices
- Put the mixture on fire, stir for a while and leave it to steam
- After some minutes, add dry and smoked fish to the mixture on fire
- Stir gently and leave to boil
- After a while, add water to the mixture, stir gently and leave to boil
- Put fresh tomatoes, onions and red chili pepper into the mixture, then leave to boil for some minutes
- Take out onions, tomatoes and red chili pepper into a bowl and allow to cool down
- After taking them out, add tomato paste to the mixture on fire and stir. Leave to boil
- Pour cooled onions, tomatoes and red chili pepper into blender, add water then blend
- Pour blended onion, tomatoes and red chili pepper into the mixture on fire
- Stir, cover and leave to boil
- Pour groundnut paste into mixture, but before that, add water to the groundnut paste and stir to make it easier for transfer into mixture
- Stir mixture to mix groundnut paste very well with the mixture
- NB: Stir softly to avoid soft fishes and chicken from breaking
- Cover and leave to boil
- After a while, there will be formation of oil at the surface of the soup.
- Ready to serve
