GROUNDNUT SOUP

INGREDIENTS

  • Groundnut paste
  • Onions
  • Fresh tomatoes
  • Tomato paste
  • Dry red chili pepper 
  • Chicken
  • Dry and smoked fish
  • Spices
  • Salt

METHOD OF PREPARATION

  • Pour groundnut paste into cooking pot
  • Add water and put on fire 
  • Stir till the paste mixes very well with water
  • Stir continuously till there is a formation of oil at the surface
  • Cover and leave to boil
  • Wash chicken and put in a different cooking pot.
  • Chop onions, garlic and ginger into smaller sizes
  • Put chopped onions, garlic and ginger blender, add water then blend
  • Pour blended onion, garlic and ginger into the cooking pot containing the chicken, add salt and spices
  • Put the mixture on fire, stir for a while and leave it to steam
  • After some minutes, add dry and smoked fish to the mixture on fire
  • Stir gently and leave to boil
  • After a while, add water to the mixture, stir gently and leave to boil
  • Put fresh tomatoes, onions and red chili pepper into the mixture, then leave to boil for some minutes
  • Take out onions, tomatoes and red chili pepper into a bowl and allow to cool down
  • After taking them out, add tomato paste to the mixture on fire and stir. Leave to boil
  • Pour cooled onions, tomatoes and red chili pepper into blender, add water then blend
  • Pour blended onion, tomatoes and red chili pepper into the mixture on fire
  • Stir, cover and leave to boil
  • Pour groundnut paste into mixture, but before that, add water to the groundnut paste and stir to make it easier for transfer into mixture
  • Stir mixture to mix groundnut paste very well with the mixture
  • NB: Stir softly to avoid soft fishes and chicken from breaking
  • Cover and leave to boil
  • After a while, there will be formation of oil at the surface of the soup.
  • Ready to serve
